Upma Recipe

Upma is the most loved, flavorful South Indian breakfast dish made in most Indian households, made from Rava or cream of wheat. It is the healthiest breakfast option. One can either have it plain or with added vegetables, chutney, or idli.

Ingredients:-

  • 1 cup Rava
  • 1/3 cup finely chopped onions
  • 1 tsp chopped green chilies
  • 1 tsp finely chopped ginger
  • 2 tbsp. coriander leaves
  • 8-10 curry leaves
  • 10-12 cashew nuts
  • 1 tsp chana dal
  • 1 tsp urad dal
  • Salt to taste

Method:-

  1. Heat a pan, add 1 cup of rava, and keep stirring it; until it becomes fragrant and starts to look dry, separate, and crisp. Don’t make the Rava
  2. Once the raves dry, switch off the flame, put the roasted Rava on a plate, and keep aside.
  3. In a pan, heat 2tbsp ghee or oil on a low flame. Then add 1 tsp mustard seeds. After the mustard seeds crackle, add ½ spoon cumin seeds along with 1 tsp chana dal and 1 tsp urad dal. Keep on stirring till the dals become a bit brownish.
  4. Then add 10-12 cashew nuts, keep stirring it becomes golden brown.
  5. Now add finely chopped onions, saute till they soften and become glassy.
  6. Then add the chopped green chilies, ginger, and curry leaves. Stir well for few seconds.
  7. Add 2.5 cups of water to this mixture. Add salt and mix well. On a medium flame, boil the water, then add Rava slowly with a spoon.
  8. Keep on stirring continuously so that the roasted ravagets mixed properly with water.
  9. Ravagrains will absorb the water well and get cooked. Cover and allow the Rava upma to steam for 2-3 mins on low heat.
  10. Switch off the flame, and garnish with coriander. Serve it alongside chutney or pickle, or serve it plain.

Poha Recipe

Poha or Pohe is another one of the quick and healthy breakfast recipes common in all Indian households. Made with flattened/beaten rice, onions, potatoes, peanuts, spices, etc, this nutritious breakfast is easy to make and can be made within 20 mins.

Ingredients:-

  • 5 cups of thick Poha
  • 1 medium onion finely chopped
  • 2-3 green chilies
  • 8-10 curry leaves
  • 1 medium potato cut into small cubes
  • 3-4 tbsp peanuts
  • ¾ tsp mustard seeds
  • ¾ tsp cumin seeds
  • ½ tsp Tumericpowder (can be added more for color)
  • Salt as per taste
  • Lemon juice (optional)
  • 2 tbsp coriander leaves

Method:-

  • Take 1.5 cups of medium or thick flakes poha and put them on a strainer. Rinse the poha with approximately 4 – 5 cups of water. Cover and keep it aside so that the poha can be softened.
  • Heat oil in a pan or kadhai. Add the peanuts and fry them on low heat till they become golden brown. Remove and keep aside.
  • In the same pan, add little oil and put cumin and mustard seeds. After sauteing for 2 mins or till they splutter, add green chilies, curry leaves, and chopped onions. Saute till the onions become translucent.
  • Now add the potatoes to the above and stir them for a minute. Cover the pan with a lid, so that the potatoes soften.
  • After the potatoes are cooked, add the salt and turmeric Mix well. Then add the rinsed poha and mix them gently.
  • Cook on low heat, till the poha, have become hot. Turn off the flame. Add the peanuts, coriander leaves, and lemon juice. Serve hot.

Rava Dhokla Recipe

The Rava dhokla is yet another light yet healthy breakfast recipes made with Rava or sooji. It’s perfect for weight loss, but yet keeps the tummy full.

Ingredients:-

  • 1 cup Rava/sooji
  • 1 cup Dahi/yogurt
  • ½ cup water
  • Salt as per taste
  • ½ tsp soda bicarbonate/eno
  • 1 tsp sesame seeds
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 8-10 curry leaves
  • 2 tbsp chopped coriander leaves
  • 1 tbsp grated coconut

Method:-

  • Mix the rava, yogurt, water, salt in a large bowl. Keep aside.
  • Add 3-4 cups of water to the steamer and heat it.
  • Grease the Dhokla tray with oil and keep it aside.
  • Now add ½ tsp ENO/Soda Bicarbonate to the mixture. Whisk it quickly till the batter becomes frothy. Now put this batter in the Dhokla tray and keep it in the steamer. Cover the steamer and cook the Dhokla for approximately 20 minutes.
  • After 20 mins, insert a knife or a toothpick to check if the Dhokla is cooked. If it’s cooked properly, turn off the flame.
  • Allow the Dhokla to cool for 5-6 mins.
  • Heat the oil in a small pan and mustard and cumin seeds, and allow till crackles. Then add sesame seeds and curry leaves and temper them for a few seconds. Switch off the flame, and with a spoon spread the tempering evenly over the Dhokla.
  • Lastly, add coriander leaves or freshly grated coconut. Serve the Dhokla with chutney.

Moong Sprouts Salad Recipe

Yes, you read it right. This is the only salad that one can have for breakfast. It’s very easy to make, healthy, low fat, gluten-free, and completely vegan. Actually one can find all these ingredients in any Indian household.

  • 5 cups of sprouted moong
  • 1 small finely chopped onion
  • ¼ tsp red chili powder
  • 1 medium-sized tomato finely chopped.
  • 1 finely chopped green chilis
  • ½ tsp chaat masala
  • 1 tsp lemon juice
  • 1 finely chopped medium-sized potato
  • 2 tbsp coriander leaves
  • Salt as per taste

Method:-

  • Boil 1.5 cups of sprouted moong in a big bowl.
  • Add finely chopped onion, tomato, chopped potato, green chilis, and mix well.
  • Add the red chili powder, chaat masala, lemon juice, and salt. Mix well.
  • Garnish with coriander leaves and serve immediately.

Moong Dal Chilla Recipe

This is a healthy, tasty, and nutritious chilla made with yellow moong dal. The moong dal has to be soaked overnight or for a few hours before it can be ground.

  • 1 cup soaked moong dal
  • ¼ cup water for grinding or as required
  • ¼ spoon turmeric powder
  • ½ tsp cumin powder
  • ¼ spoon red chili powder
  • ¼ cup chopped coriander leaves
  • 1 tsp grated ginger
  • ¼ cup finely chopped onions
  • 1-2 finally chopped green chilis
  • Salt as per taste

Method:-

  • Soak the moong dal overnight in 2-3 cups of water. The moong dal would double in size. Discard the water and grind the moong dal with the required amount of water in the grinder.
  • A smooth and lump-free batter is required for making the chilla.
  • Put the batter in a bowl and add turmeric powder, red chili powder, cumin powder, and salt. Mix well.
  • Add the chopped onions, ginger, coriander leaves, green chilis and mix well.
  • Allow the batter to rest for 20 minutes.
  • The batter should be of an even consistency. The batter should resemble a dosa batter now.
  • Heat the pan and brush it with a little oil.
  • Add a scoop of batter to the pan and spread it evenly in a round dosa
  • Cook the chili on medium heat until they turn crisp and brown.
  • Turn the chills on the other side and cook.
  • Moong Dal Chillas is ready. You can serve them with either ketchup or chutney.
